Here is the annual St. Patrick's Day Meal that is consumed at our house. Be sure to go to the store and buy it tonight and start cooking before you go to the parade. Be sure that the 'leprachaun' changes the milk to green when nobody is looking. Green Beer is a must, or at least some Jameson......I said SOME, not too much. This is in my top five meals of all time!

The recipe feeds a hungry family of six inadequately . . . cook two at the same time and you'll be full and happy. Leftovers are the best!

Directions:

Put Corned Beef Brisket in crockpot.
Add water to cover about 1/2 inch from bottom of crockpot (with brisket already inside)
Cook on high for about five hours.
Remove from crockpot and put into baking pan.
Cover brisket with a mixture of:
3 tablespoons of honey mustard.
1 cup red wine
1/4 cup brown sugar (amount of brown sugar depends on size of brisket)
(The mixture gives the brisket a crispy crust.)
Mix and pour over beef in pan.
Put in oven at 375 degrees for 1/2 hour to 45 minutes. Let it sit for about five to ten minutes before you cut it up. Cut WITH the grain of the meat, not against it.

(Optional - I cook carrots and cabbage/potatoes separately.

Some people like to throw it all in together. It's your call.)
